QUASI-MAGIC-PAN-RESTAURANT SALAD 
1 head Romaine lettuce
1 lg. red onion
2 sm. cans mandarin oranges, well drained
1 c. sliced almonds (toasted, if desired)
Italian salad dressing (pre-made or store bought)

Break up one head of Romaine lettuce, washing leaves as you go and place in salad spinner; set aside.

Dice one large onion and place in medium-sized mixing bowl. Add to onions, the 2 small cans of well-drained mandarin oranges and 1 cup of sliced almonds. If toasted almonds are desired, place them one layer thick on an ungreased baking sheet at approximately 350 degrees for 5 to 10 minutes before mixing with other ingredients.

In large salad bowl, toss Romaine lettuce, onions, mandarin oranges and almonds together along with Italian dressing until all ingredients are well coated. Serves 4 to 6 and makes for a refreshing first course.
