LOBSTER STEW | |
3 chicken lobster, boiled and shelled (save fat, roe, tamale and liquid) 1 qt. milk 1 pt. light cream 1 tbsp. butter Salt and pepper to taste 1 tsp. parsley flakes 1/2 tsp. basil 1 tsp. onion salt 4 tbsp. instant mashed potatoes Dash of Angostura Bitters Simmer cut-up lobster meat with seasonings in butter and their own liquid for 5-10 minutes gently. Add 1 pint milk and let cook covered (or refrigerate overnight for use the following day). Reheat, DO NOT BOIL. Add balance of milk, cream, and instant potatoes, stir gently and constantly until slightly thickened. Just before serving, stir in dash only of Bitters. Serves 4-6. |
