TAPIOCA FRUIT SALAD 
1 box minute tapioca
2 c. sugar
6 c. cold water
6 oz. can frozen orange juice concentrate
16 oz. can pineapple chunks and juice
6 juicy oranges or 2 cans mandarin oranges
6 bananas
Water or orange juice to soften

Cook tapioca, sugar and water until mixture turns glassy. Add frozen orange juice to cool. Add pineapple and oranges and refrigerate.

If salad is too thick, soften/dilute with water or orange juice. Add bananas just before serving.

Makes large quantity but stores well as long as bananas aren't added.
