MARYLAND CRAB CAKES 
1 Ib. crab meat
3 slices bread
Old Bay seasoning
1 egg
1 1/2 tsp. mayonnaise

Put crab meat in a bowl and check for shells (remove them). Break bread into little pieces and add to bowl or process in a food processor.

Break in egg. Add mayonnaise and Old Bay seasoning to the taste. Mix well.

Form mixture into cakes and place in refrigerator for at least one hour to firm up.

Heat a skillet with a little butter and olive oil; fry for 3-5 minutes, or until browned, turn and repeat on other side. Serve with lemon wedges and tartar sauce, if desired.
