“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Because its against my religion to consume meat or eggs, i've always had it tough trying to find proper recipes where the food actually comes out right. These were absolutely amazing, the recipe is wonderful!

Recipe is GREAT! I too did not have any eggs, and had all the ingredients at home, so long to ready made mixes this will be my favorite for pancakes home made.

I found myself without eggs this morning, so decided to try this recipe. I was a little concerned about the amount of cinnamon, but my husband loved the pancakes. He admitted he likes the crispy edge that the butter adds, reminding him of his mother's, which were cooked in the leftover bacon grease (shudder). Thanks also for the no-salt. The baking soda gives just the right taste!

Great cakes, but my batter was extremely thick!?! More like a dough not a batter. Any suggestions? I followed the recipe to a T are they always that way? Kids loved them, I liked them other then the density! A little less flour? Please respond back! I would make them again!!

I had my doubts, but these are really good. I ran out of eggs yesterday and didn't feel like going to the store. Since I had everything else, I thought I'd give these a try. This will be my go-to eggless recipe.

I think a better name for these should be "griddle cakes" because this recipe makes me think they should be thick & fluffy, for me they turned out pretty thin. The vanilla really shines through which is nice. I added a pinch of salt. Make sure your pan is super hot & don't be afraid to play around to bump up the flavor.

I've been using the same eggless panacake recipe for over ten years. It has always been just ok. Today I couldn't make them fast enough. My daughter loved them. She said she wants strawberries in it next time. I would make it with a pinch of sailt and less cinnamon in the future but they are excellent either way. Great easy recipe. Nom nom nom.
