CRAB MEAT AU GRATIN 
2 tbsp. butter
2 c. lump crab meat
1 tbsp. cornstarch
1 c. cream
1 egg yolk
Salt to taste
1/2 c. grated cheese (half Parmesan and half Cheddar)
Paprika (sprinkle on top for color)

Melt butter, add crab meat and saute 3 minutes. Add cornstarch mixed with cream and egg yolk. Cook until thick, season with salt to taste, pour into a buttered casserole, sprinkle with cheese and paprika. Bake at 350 degrees until cheese is melted. Serve with toast and salad. Serves 2 to 4.
