EGGS MORNAY 
Canadian bacon or ham
English muffins
Eggs, poached
Salt and pepper
2 tbsp. butter
3 tbsp. flour
3/4 tsp. salt
1/4 tsp. nutmeg
1 c. light cream
1/4 c. dry white wine
1/3 c. shredded Swiss cheese

Lightly brown bacon or ham in butter. Split English muffins and toast and butter. Place bacon or ham on each and top with poached eggs. Salt and pepper to taste. Pour Mornay Sauce over.

MORNAY SAUCE:

Melt 3 tablespoons butter and blend in 3 tablespoons flour, 3/4 teaspoon salt, 1/4 teaspoon nutmeg and dash of pepper. Add 1 cup light cream all at once. Stir until thickened. Stir in 1/4 cup dry white wine, add 1/3 cup shredded Swiss cheese, stir to melt.
