BAKED STUFFED SCALLOPS 
1 1/2 lbs. scallops, quartered
1 1/2 sticks butter
1 c. Ritz crackers, crushed like bread crumbs
1 c. bread crumbs
3 shakes salt
3 shakes pepper
3 shakes garlic powder
1/2 pt. heavy cream

Melt butter and add crushed crackers and bread crumbs, plus seasoning. Fold in the cut up scallops and place in a 2 quart casserole dish. Pour 1/2 pint of heavy cream over the top and bake at 350 degrees for 45 minutes to 1 hour. Top will be golden brown. Recipe can also be used with boneless, skinned chicken pieces. Serves 4.
