BAKED STUFFED SCALLOPS 
1 1/2 lbs. scallops
1 stack Ritz crackers
4 slices bread
1 can minced clams
1/4 lb. butter
Dash of lemon juice
1 tbsp. parsley flakes
Paprika

Place scallops in 9 inch square pan. Crumble Ritz crackers and bread very fine. In saucepan, heat clams with juice, butter, and lemon juice until butter melts. Remove from stove. Mix crumbs and parsley with the mixture in saucepan. Spread mixture over scallops. Sprinkle with paprika. Bake at 350 degrees for 20 minutes.

Note: same stuffing may be used for baked stuffed lobster. Just add 1/2 pound chopped scallops to mixture and use to fill 3 to 4 chicken lobsters. Delicious! Enjoy!
