GOOD BATTER (FOR VEGETABLES & MEATS) | |
1/2 c. flour 1/2 tsp. salt 1 egg, beaten 1/2 c. yellow cornmeal 1/2 tsp. baking powder 1/2 c. ice water 1/2 tsp. onion salt 1 tbsp. vegetable oil 1. Sift flour, cornmeal, salt, onion salt and baking powder. 2. Combine with egg, water and oil. 3. Beat gently. 4. Use enough of the water as needed to make the batter as thick as cake batter. 5. Dip vegetable slices in batter, then into hot oil. 6. Fry until brown, turn once, brown. 7. Drain on paper towels. 8. If using for fish, omit onion salt and add 1/2 teaspoon Old Bay seafood seasoning. |
