QUICK CAULIFLOWER MASHED
POTATOES
 
I came up with this recipe for my pregnant girlfriend who wasn't eating enough vegetables. I hid them in the potatoes and she had a quick healthy snack on hand.

3 cups cauliflower
1/4 cup green onion tops (optional)
1/2 cup 2% or non-fat milk
1 cup non-fat plain yogurt
3 tbsp. butter
spices (your choice)

Steam cauliflower (and onions if chosen) until very tender, let cool slightly then transfer to a food processor or blender. Puree with milk, yogurt, butter, and any spices you choose (garlic salt or powder, onion powder, etc.) until fairly smooth and liquid.

Pour mixture into ice cube trays and freeze overnight. Break up cubes and place in airtight container.

TO PREPARE A SERVING:

2 cubes frozen cauliflower mix
1/4 cup instant mashed potato flakes

Melt two cubes until near boiling and add 1/4 cup of instant mashed potatoes. If too thick/not enough liquid a tablespoon of water can be added when heating the cubes.
