TABOOLI 
1 c. crushed wheat
1/2 c. lentils (soaked overnight (optional)
1 bunch parsley, cut up
1 bunch green onions, cut up
2 green or red peppers, sweet, cut up
1 lg. bunch fresh mint leaves or 1 tbsp. dry mint leaves, crushed
4 or 5 tomatoes, cut up
2 cucumbers, optional
1 tsp. black pepper
Salt to taste
1/2 c. olive oil or salad oil
Lemon juice to taste

Wash the crushed wheat and remove all the water by squeezing and draining. Drain the water from soaked lentils, then in a large bowl put crushed wheat, lentils, then add all of the vegetables which have been cut up for salad. Add the lemon juice, oil, pepper and salt and mix all the ingredients well. Serve with washed, crisp lettuce leaves, tiny fresh grape leaves, or boiled and salted cabbage leaves. Tabooli is eaten rolled in the various vegetable leaves.
