DUTCH SPLIT PEA SOUP | |
4 c. dried split peas 2 qts. water 2 c. chicken stock 1 lg. onion, chopped 1 c. celery, chopped 1 c. carrot, chopped 1 lg. bay leaf 1/4 tsp. thyme 1/4 tsp. marjoram 3 springs parsley, chopped 1 tsp. salt (or more) 1 to 2 c. sliced Polish sausage Wash split peas; drain. In large pot put all ingredients; bring to boil, then reduce heat and simmer for 2 hours. Stir often to prevent sticking. Remove bay leaf before serving. Note: Add more water or broth if you like a thinner soup. |
