SMOTHERED CABBAGE 
2 lb. green cabbage
2 med. sized sweet potatoes
1 lb. smoked beef sausage
Salt and pepper to taste
Vinegar (white)

Heat a large skillet over low heat. Cut cabbage into fourths, remove core. Slice each fourth into 1 inch wide wedges; wash in cold water. (Do not dry).

Place cabbage into heated skillet.

Arrange sweet potatoes (cut in half lengthwise) and smoked beef sausage (cut into 3 inch lengths) over cabbage. Season. Cover tightly, simmer over very low heat for 45 minutes.

Serve with hot cornbread and sliced tomato salad.

Add few drops of white vinegar over each serving of cabbage wedge.

Serves 4.
