ONION SPINACH QUICHE 
1 lb. (2 c.) chopped sweet onions
1/4 c. butter
1 (10 oz.) pkg. chopped spinach
3/4 c. grated Swiss cheese
3 eggs
1 c. half & half
1 tsp. salt
1/8 tsp. pepper
Dash of nutmeg
1 unbaked pie shell

Saute onions in butter. Cook frozen spinach and drain thoroughly. Combine onion, spinach and cheese. Beat eggs. Blend in cream (or milk) and seasonings. Bake pie shell. Pour egg mixture over top and bake 35-40 minutes at 375 degrees or until knife inserted in center comes out clean.
