QUICHE (Mushroom and Onion) 
1 1/2 c. half and half
4 eggs
1/2 tsp. salt
Dash of pepper
1 lg. can sliced mushrooms (drained)
1 lg. onion (chopped)
2 c. grated cheese (Cheddar and Mozzarella)
2 tbsp. flour
2 deep dish pie crusts (unbaked)
2 slices crisp bacon

(Can substitute 1 box drained, frozen, chopped spinach for onion if desired.)

Preheat oven to 350 degrees. Mix half and half, eggs, salt and pepper well.

In separate bowl stir flour in with the grated cheese. Stir egg mixture, mushrooms, onion or spinach and crumbled bacon together. Add cheese mixture. Pour into pie crust and bake for 40-50 minutes until lightly browned on top. (Makes 2 pies.)
