BLACKBERRY CAKE | |
4 eggs 2 c. sugar 3 c. flour 1 c. shortening 1/2 c. buttermilk 2 tsp. baking soda, dissolved in buttermilk 2 c. blackberries, well drained (use juice in cake) 2 tsp. cinnamon 2 tsp. allspice 1 tsp. cloves 1/2 tsp. salt Drain blackberries. Cream sugar and shortening. Add well-beaten eggs. Sift flour, spices, and salt together. Add buttermilk with soda and juices from blackberries. Fold in berries that have been well drained. Makes 2 or 3 layer cake. Bake at 350 degrees for 30 minutes. Frost with favorite icing. |
