SAUSAGE AND ONION QUICHE | |
1/2 lb. sausage meat 3 tbsp. butter 5 med. sized onions, chopped (approx. 3 c.) 3 eggs 1/2 pt. whipping cream 2 tbsp. Dijon mustard (or 1/4 tsp. dry mustard) Nutmeg, salt & pepper to taste 1 c. Swiss cheese, grated 1 9" pie shell, baked Preheat oven to 350 degrees. In a heavy skillet, cook sausage meat while continually crumbling with a fork. Remove sausage meat and drain well. Add butter to sausage fat in skillet; saute onions until golden. Remove onions with a slotted spoon and drain. Cover pie shell with sausage meat and onions. n a bowl whisk together eggs, cream, mustard and seasonings. Stir in cheese. Pour into pie shell and bake at 350 degrees for 35 minutes. Serves 6-8. |
