BREAD PUDDING 
8 c. broken bread (about 1/2 loaf)
2 1/2 c. milk (scalded)
2 tbsp. butter (melted)
2 eggs
1/2 c. sugar
1/2 tsp. cinnamon
1/2 c. raisins

Soak raisins in boiling water to cover. Beat eggs and sugar together until creamy. While beating, add scalded milk and melted butter. Add raisins and liquid to the egg mixture.

Pour over broken bread and mix. Pour into a buttered 8 x 8 inch pan. Sprinkle 1/4 cup sugar and 1/4 teaspoon cinnamon over the top. Bake at 350 degrees for 1 hour. Serve with the following sauce:

WHITE SAUCE:

1/2 c. water
1/4 c. sugar
1/2 tbsp. corn starch
1/4 tsp. vanilla

Bring to a boil and thicken with corn starch dissolved in a little water. Add vanilla.

CARAMEL SAUCE:

1/2 c. water
1/2 c. brown sugar
1/2 tbsp. corn starch
1/4 tsp. vanilla

Bring to a boil and thicken with corn starch dissolved in a little water. Add vanilla. Pour sauce over each piece just before serving.
