POTATO PAN FRY 
1 lg. sliced onion
2 tbsp. butter
3 c. 1/2 inch potato cubes
Salt, pepper, parsley

Saute 1 large onion (sliced) in 2 tablespoons butter. Add 3 cups potato cubes and enough water to steam cook them. Keep checking water level until they are soft, then drain any extra water. Now add salt, pepper and parsley to taste and enough butter (about 3 pats) to quickly brown all. Complements fish, pork, chicken and beef.
