PAN FRIED POTATOES 
6-8 med. potatoes
2 med. onions
Salt and pepper to taste
1/8 c. cooking oil

Peel potatoes and onions (wash). Slice potatoes to desired thinness. Slice onion in small pieces. Heat oil in frying pan. Place potatoes in the frying pan with cooking oil. Cover. Place heat on medium. Cook for approximately 15 minutes, turning during that time. Place onions on top and let cook for 5-10 minutes. Stir. Potatoes should cook in approximately 20-25 minutes. Salt and pepper to taste. Drain grease by placing potatoes in a colander. NOTE: I enjoy using the iron skillet for cooking this recipe.

Very good, but I prefer my taters diced. I also dice and pan fry family's favorite sausage in a separate pan then stir in to potatoes just before serving! (Serve with buttered noodles with sauteed garlic, broccoli and cauliflower. Don't sautee too long, broccoli should still be bright green).
