PAN FRIED POTATOES 
6 med. potatoes
3/4 tsp. pepper
3/4 tsp. salt
1/3 c. shortening

Peel potatoes and wash. Cut potatoes into long, narrow pieces. Sprinkle salt and pepper on potatoes and mix. Put shortening in large skillet and heat. When melted, not hot, add cut up potatoes. Cook covered on medium high heat for about 25 minutes. During cooking keep turning until they are a soft brown and tender. Drain off liquid. Take up into a bowl. Serving 4-6.
