MOMS BEEF AND TOMATO CROCK POT STEW | |
2 lbs of stewing beef or any other cut of beef steak that is on sale 2 stalks celery (chopped) 1 small bag baby carrots 1 small can tomato paste 3 medium sized baking potatoes, cubed and peeled 1 900 ml box beef broth 1 packet onion soup mix dash of garlic salt dash of Italian seasoning I call this Mom's beef stew because when I moved out I tried mimicking the stew my mom made and it tasted good but it totally turned out a different way than she made; but my way is still good. If the pieces of stewing beef are large, cut the larger pieces in half. It will be easier to cook in smaller pieces. If you are choosing to use steak, cut crosswise slices across the grain. Put beef in a large mixing bowl. Mix in the onion soup mix. Sprinkle liberally the garlic salt and Italian seasoning. Then mix in the can of tomato paste making sure all pieces of beef are coated. Toss the celery into the Crockpot then the carrots, the beef and the potatoes. Pour in the entire box of beef broth. For the can of tomato paste, if there is any leftover, pour a trickle of water in the can and mix well with a spoon. Pour the mixture into the Crockpot for maximum flavor. Cook on low for about 8 hours (or until you return home from work) or on high for 4 hours. It is recommended, though, to stir about every 1 or 2 hours so the ingredients can cook evenly.
