PORTABELLA BACON MUSHROOM
BURGERS FOR TWO
 
2 portabella mushroom caps (cleaned, stems removed)
2 hamburger buns
2 cheese slices of your choice (I used havarti)
2 pieces of bacon (i used precooked)
2 slices onion
2 tablespoons mayonnaise
3 tablespoons butter
1 teaspoon basil
1 garlic clove, crushed or chopped
fresh spinach leaves or lettuce
salt and pepper

Heat skillet to medium heat. Combine basil, garlic, and butter in a small bowl place in microwave for about 20 seconds. Brush the bottom side of mushrooms with the melted butter, brush one side of onion slices with melted butter and place in skillet. Cook for about 5-6 minutes, flip mushrooms and onion slices over and brush with butter, cook for about 5 minutes.

Meanwhile, brush hamburger buns with remaining butter and broil for a few minutes. Heat bacon slices in microwave, drain and set aside. Remove hamburger buns from oven, dress buns with mayonnaise. Place mushrooms and onions on bottom portion of buns, top with bacon and place bun on top. Broil for a few minutes, then top with spinach/lettuce, and salt/pepper to taste.
