VEGETABLE CASSEROLE 
2 c. fresh sliced carrots
2 c. fresh or frozen green beans
1 to 2 c. sliced celery
1/2 c. green pepper
1 c. onion
1 c. stewed tomatoes
Salt and pepper
4 tbsp. melted butter
3 tbsp. tapioca
1 1/2 tbsp. sugar

Mix first 7 ingredients. Stir in melted butter, tapioca and sugar. Bake covered at 325 degrees for 2 1/4 hours. May add zucchini or yellow summer squash if desired. Serves 6.
