DANDELION JELLY 
1 qt. dandelion blossoms
1 pkg. MCP pectin
1 tsp. lemon juice
4 1/2 c. sugar
4 c. water

Pick a quart dandelion blossoms, no stems. Rinse. Add 4 cups water; boil 5 minutes; strain. Should have 3 1/2 cups juice. If short, add water, but press it out of the blossoms. Add 1 package MCP pectin and 1 teaspoon lemon juice.

Bring to a boil; add 4 1/2 cups sugar. Cook at a rolling boil 3 minutes while stirring. Put in hot containers, cover with wax, or your favorite method. It's delicious. You'll never consider DANDELION "just a weed" again.
