DANDELION SALAD 
1 lb. young dandelion leaves
2 tbsp. white wine
Salt & pepper to taste
1 clove garlic, minced
4 slices bacon, chopped
2 sm. onions, diced
2 tbsp. olive oil

Clean dandelions and drain thoroughly; chill. Fry bacon in small skillet until crisp. Before serving add wine to bacon drippings and heat. Place dandelion leaves, onions, garlic, salt and pepper in large salad bowl; add oil and toss lightly. Add hot wine mixture, toss and serve immediately. Garnish with bacon bits. Serves 4.
