QUICHE LORRAINE 
1/2 lb. lean bacon
1/4 lb. Cheddar cheese
1/4 lb. Swiss cheese
4 eggs
2 c. half & half cream
1 tsp. salt
Pinch of sugar
Pinch of nutmeg
Cayenne
Black pepper
Large unbaked pie shell

Cook bacon crisp; break into small pieces. Beat eggs, cream and seasonings just long enough to thoroughly mix.

Rub a little butter on the surface of the pie shell. Sprinkle bacon over the bottom. Grate cheeses and put over bacon. Pour egg mixture over cheese. Bake at 450 degrees for 10 minutes. Reduce heat to 300 degrees. Bake until the eggs have set (25-30 minutes). Serves 6-8.
