QUICHE LORRAINE 
Baked pastry shell for 9 inch pie plate
6 slices lean bacon, cooked and crumbled
2 c. light Swiss cheese, shredded or light Cheddar cheese
3 eggs, slightly beaten
1/2 c. chopped onion
1 c. sliced fresh mushrooms
1 c. Half and Half
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. nutmeg
Green pepper (optional)

Prepare pastry shell. Bake. Set side. Sprinkle bacon, cheese, onion and mushroom over bottom of baked pastry shell. Mix eggs, Half and Half, salt, pepper, nutmeg. Pour over ingredients in pastry shell. Cook uncovered in microwave 9 1/2 to 11 minutes at SIMMER, or until center is set. Rotate the pie plate 1/4 turn once. Allow to stand 5 minutes before serving.

Baked pastry shell - transfer frozen pie shell from aluminum pan to a 9 inch glass pie plate. Cook uncovered in microwave 1 minute on HIGH. Prick shell thoroughly with a fork. Cook uncovered 4 minutes at HIGH. Rotate 1/4 turn twice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
