AUNT MINNIE'S CHILI RELLENOS
(Easy)
 
1 sm. can (4 oz.) chili peppers
1/2 lb. sharp Cheddar cheese, grated or shredded
2 eggs, slightly beaten
2 c. milk
1/2 c. flour
1 tsp. salt
1 sm. onion, diced

Grease casserole. Arrange chili peppers, cut into pieces, on bottom of dish. Cover with cheese and onion. Combine eggs, milk, flour and salt. Pour over cheese. Bake in moderate oven (350 degrees) for 45 minutes or until custard is set. Serves 6.
