CARROT - RAISIN CAKE 
1 1/2 tsp. baking soda
1/4 c. warm water
1 1/2 c. shredded carrots
1 c. raisins
3/4 c. granulated sugar
1/2 c. plain non-fat or low-fat yogurt
1/2 c. unsweetened applesauce
1/4 c. vegetable oil
1 lg. egg OR whites from 2 lg. eggs
2 tsp. cinnamon
1/2 tsp. cloves, nutmeg & salt
1 c. whole wheat flour
1 c. all-purpose flour

Heat oven to 325 degrees. Grease 8 or 9 inch square pan.

Mix baking soda and water in small bowl.

In a large bowl, mix carrots, raisins, sugar, yogurt, applesauce, oil, egg, cinnamon, cloves, nutmeg and salt. Stir in flours, then baking soda mixture. Spread in prepared pan.

Bake 1 hour, cool on wire rack about 10 minutes before removing from pan. Serves 8.
