QUICK CARROT RAISIN CAKE | |
1 1/2 tsp. baking soda 1/4 c. warm water 1 1/2 c. finely shredded carrots 1/2 c. no fat yogurt 3/4 c. sugar 1/2 c. unsweetened applesauce 1/4 c. vegetable oil 2 egg whites 2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. ground cloves 1/2 tsp. salt 1 c. raisins 1 c. whole wheat flour 1 c. all purpose flour In a small bowl, combine baking soda and warm water. Set aside. In large bowl combine carrots, yogurt, sugar, applesauce, oil, egg whites, cinnamon, nutmeg, cloves, salt and raisins. Stir in flour and then baking soda mixture. Pour batter into greased 9 inch square pan. Bake in preheated 325 degree oven for 45-50 minutes. Test for doneness. Let cake cool in pan on rack for about 10 minutes before turning out onto rack to cool completely. |
