CARROT-RAISIN CAKE | |
1 1/2 tsp. baking soda 1/4 c. warm water 1 1/2 c. shredded carrots 1 c. raisins 1/2 c. unsweetened applesauce 1/4 c. vegetable oil 1 lg. egg or 2 egg whites 2 tsp. cinnamon 1/4 tsp. cloves and nutmeg 1/2 tsp. salt 2 c. flour 1/2 c. plain yogurt 1. Heat oven to 325 degrees. Grease an 8 or 9 inch square pan. 2. Mix baking soda and warm water in a small bowl. 3. In a large bowl, mix carrots, raisins, sugar, yogurt, applesauce, oil, egg, spices and salt. Stir in flour, then baking-soda mixture. Spread in prepared baking pan. Bake 1 hour or until a pick inserted in center comes out clean. Cool 10 minutes before turning cake out on rack. |
