“SIMPLE CHICKEN CORDON BLEU” IS IN:

SIMPLE CHICKEN CORDON BLEU 
4 chicken breasts (boneless, skinless)
4 slices Swiss or Provolone cheese
4 thin sliced smoked ham
1/4 cup all-purpose flour
1 egg, beaten
1 cup Italian seasoned bread crumbs
4 tbsp. (1/2 stick) butter
1/2 cup chicken broth
1 cup whipping cream

Pound chicken breast to 1/4-inch thickness. Sprinkle each piece on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on each breast. Roll up each breast using toothpicks to secure if necessary. Dredge each in flour, shake off excess, then in egg and finally in bread crumbs. Place seam side down in baking dish that has been sprayed with Pam. Place 1 tablespoon butter on each piece of chicken.

Bake at 350°F for 35 minutes until juices run clear. Meanwhile, in a saucepan, combine broth and whipping cream; season to taste (salt, pepper, garlic, oregano). Simmer on low stirring until thickened; Pour over chicken.

Serves 4.

This is a great dinner. We made it two weeks ago and are making for our friends tonight. Trying something new tonight. We marinated the chicken in montreal seasoning and italian seasoning for the day. Can't wait to try it.

Great recipe! As a poor grad. student I modified the sauce to what we had around the apartment. I just substituted sour cream for whipping cream, added a little corn starch to thicken it and a splash of wine. Thanks!

Oh!!!! This is the BEST! I searched online on how to flatten the chicken the best idea that didn't take long was you put your chicken breast in a Ziploc bag (don't seal it), take a iron skillet and flatten it. It only takes 3 slaps and its as flat as a pancake. The hammer takes too long and results in uneven thickness but the recipe is the best I found and the easiest. Thank you so much for sharing!!

This was a great easy recipe to prepare for me and my roommates! I haven't been cooking very long and was nervous at the sound of this fancy French cuisine, but found it to be extremely easy, and the boys all loved it!! I made some modifications to the sauce to give it a little more flavor (as suggested by other reviewers): I added some wine and corn starch and then through in some minced garlic. It was awesome! I made extra and served it with farfalle (bowtie) pasta and sautéed zucchini and yellow squash. A great meal to add to my repertoire!

The "simple chicken cordon bleu" was simple to prepare and was delicious! I did not prepare the sauce this time; but did serve with buttered carrots and rice. I made the recipe with jarlsberg cheese and prosciutto ... perfecto!

This recipe is incredible....Yes the sauce needs white wine and something to thicken it. This goes great served with asparagus...Put the sauce on them too! I have been making this for 10 plus years and it's by far the recipe that gets the most RAVES!!!!!!

Has anybody ever tried hollandaise sauce? add a squeeze of lemon, yuhmm. I recommend a shortcut for your sauce, Knorr, from your local grocery.

So many reviews and no one tried using Pepper Jack and then a few slabs of green chile when browning. If you have great chile it can be DELICIOUS, however, if you have no clue, stick with the original.

This was so delicious! I especially liked the sauce although I did add a small piece of Gryuere cheese after reducing it. One more thing.. It didn't brown as much as I would like so I may try 375°F next time.
