SOUTHERN RED BEANS 
1 lb. kidney beans
1 lg. bell pepper
1 lg. onion
1/2 clove garlic
1 stick butter
1/2 lb. bacon
1 med. pkg. pig tails
1 tsp. salt
1 tsp. pepper

Let beans soak for more tender beans and then bring a large boiler of water to a boil. Pour beans in boiling water turn heat to medium and let cook about an hour. Chop season very fine, add salt and pepper to your taste, boil pig tail at same time until you put the beans on, cook pig tails until tender, fry bacon, pour 1/2 grease form bacon into the cooking beans; add pig tails and one stick of butter, cook another hour on low.
