FRIED POTATOES 
4 med. size potatoes (thinly sliced or diced)
4 slices bacon
1/4 c. butter
1 med. onion, thinly sliced
1 clove garlic, minced
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme

Fry bacon until crisp, remove from pan. Add the butter to the bacon grease. Add the other ingredients. Cook until potatoes are done and lightly browned.

About 10 minutes before potatoes are done, dice 2 tomatoes on top and finish cooking on low heat. When ready to serve crumble the bacon on top with 2 tablespoons parsley. Very good.
