RED CABBAGE WITH APPLES 
1 red cabbage, thinly shredded
2 tbsp. bacon fat or lard
1 tbsp. sugar
1/2 c. dry white or red wine
2 tart unpeeled apples, cored & sliced
Salt & pepper to taste

Put the cabbage into a deep bowl and pour over it boiling water to cover. Let stand 2 minutes and drain well. Heat the bacon fat and saute the cabbage for 2- 3 minutes, stirring constantly. Add the sugar, wine and apples. Simmer, covered, for about 5-10 minutes, or until the cabbage and apples are just tender. If necessary, add a little more wine. Season with salt and pepper. Serve with roast pork, ham, duck or goose. Serves 4-6.
