PUMPKIN CAKE 
2 c. (1 can) pumpkin puree
1 1/4 c. vegetable oil
1 1/4 c. evaporated milk
4 lg. eggs, beaten
2 tsp. vanilla
3 1/2 c. self-rising flour
1 1/2 c. sugar
2 tsp. cinnamon
1 tsp. mace
1 tsp. allspice
1 c. raisins
1 c. walnuts, chopped
Orange Cream Cheese Frosting

Preheat oven to 350 degrees. Grease 10-inch tube pan. In large bowl, mix pumpkin, oil, milk, eggs and vanilla.

In separate bowl, mix dry ingredients; add to creamed mixture until well combined. Fold in raisins and nuts. Pour into pan. Bake 50-60 minutes. Let cool in pan 10 minutes, then turn out on wire rack; cool completely. Frost with orange colored cream cheese frosting.
