PUMPKIN CAKE 
3 c. flour
2 c. sugar
4 tsp. baking powder
2 tsp. cinnamon
1 tsp. nutmeg
1 (16 oz.) can pumpkin
3/4 c. oil
1/3 c. apple or orange juice
4 eggs
2 tsp. vanilla
1/2 c. walnuts, chopped
1/2 c. raisins
Confectionery sugar

Preheat oven 350 degrees. Grease and flour 10 inch bundt pan.

In large bowl combine flour, sugar, baking powder, cinnamon and nutmeg. In a small bowl beat pumpkin, oil, juice, eggs and vanilla. Stir pumpkin mixture into flour mixture until well combined. Fold in nuts and raisins.

Turn into prepared pan and bake at 350 degrees for 55-60 minutes or until cake tester comes out clean. Turn cake from pan. When cooled, sprinkle with confectionery sugar.
