“SAMMY'S #1 SALMON PATTIES” IS IN:

SAMMY'S #1 SALMON PATTIES 
1 (14 3/4 oz.) can salmon
1/2 med. onion, chopped
2 eggs
1 tsp. ground pepper
1 tsp. fresh lemon juice
1 whole pkg. saltine crackers, crushed

Empty 1 can salmon and juice into large mixing bowl (remove bones). Add 2 eggs. Add lemon juice. Stir mixture well. Add onion, pepper, crackers. Stir.

Form into patties 3/4 to 1-inch thick. Set aside on plate or wax paper (make 5-6 patties). Let set 5 minutes.

In large frying pan heat 1/2-inch cooking oil to med. high temperature. Do not skimp on oil. When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all way through. Center should not be cold.

Patties will be beautifully brown, crunchy, and very delicious. Squeeze on some fresh lemon. mmmmm... they are to die for!

That almost the same as what my mother handed down. She never added the lemon juice. Have to try it. Some of the other item also sound like tasteful additives. We always serve with mashed potatoes covered with creamed peas. I like ketchup on mine and my husband uses mustard.

Canned salmon, 2 eggs and one pkg. (sleeve) of crushed saltine crackers is all that is really necessary for delicious salmon patties. The onions are optional, not everyone likes onions. The lemon juice is optional but I believe adds a very good flavor to the patties. Fry in oil deep enough to get a good crunchy coating on the patty, about 1/2 inch oil at med. high heat. Do that and you will have a terrific salmon patty that you and your family will love. Enjoy!

Very good recipe.... I also altered it s little bit. I took the advice from a previous comment from Beth & added 2 cups of Panko bread crumbs & drained the juice from the canned salmon, only added a little bit of juice, but it really doesn't need any. To me it makes better parties. Other than that I follow the recipe has written.

This was my very first time making salmon patties by myself and they turned out great! My mom made them all the time for my sisters and I growing up, and these are actually better than hers. Ssshh, don't tell her that. :)

This is actually an old recipe. I was taught how to make them back in 1979 by an 85 year old lady, my boss's mother. Grandmas know best. A very simple recipe, so simple that many people cannot believe that it would taste good so they start adding other ingredients that do not improve the recipe at all. Go with the original recipe and you will be very happy. Trust me.

Never made salmon patties... But do I use red or pink salmon. Don't care about the cost... So which do you think best? Also one pack of saltines... Not sure if that is one whole box? One sleeve? I'm a cook who needs lots of coaching (as you can see). Thanks. My mom made... But alas, she's gone, and I never paid attention.

I use pink Salmon (Bumble Bee, Icy Point etc.) and it works very well. Use the whole can and pick out the bones if you wish.

I made these once before using this recipe and they turned out wonderful, but tonight I decided to add a whole onion instead of half (I'm new to the cooking game)... completely fell apart in the skillet. I just let the mess finish frying, and then I drained the grease using a strainer, mixed the fried salmon mush with some white gravy and served over rice, turned out amazing!

Almost exactly what my Nana used to make for my little cousins and brother when we were kids! I used one chopped green bell pepper and a small yellow onion though.

I've never used breadcrumbs in my patty recipes because I never had the time or patience to stand there and toast bread then crunch it up, but I found some saltine crackers and it took the patties to another level! Best ever :3 thank you so much for the refresher recipe!

The best salmon patties I have eaten. I added parsley flakes and garlic powder. I also made the 1/2 cup mayo, 1 tsp mustard, and about 1/2 dill sauce. Awesome. One of my girls would never eat salmon patties. She ate these up.
