REFRIGERATOR COOKIES 
2 c. sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1/4 c. unsalted butter or vegetable butter
1/2 c. granulated sugar
1/2 c. firmly packed light brown sugar
1 lg. egg
1 tsp. vanilla
1 c. chocolate chips (optional)
1 c. coarsely chopped pecans or walnuts (optional)

Sift flour, salt and baking powder together; set aside. Cream the butter in a large bowl, using electric mixer on medium speed, until light. Add the granulated sugar gradually, beating continuously. Then add the brown sugar; mix well.

Reduce the mixer speed to low and add the egg. Gradually add the flour mixture and the vanilla. When well mixed, stir in the chocolate chips and/or nuts as desired. Shape the dough into a roll about 2- inches in diameter. Wrap in foil or plastic wrap and refrigerate overnight or freeze.

To bake, preheat oven to 400 degrees. Slice the roll of dough into 1/4-inch thick slices. Arrange cookies 1/2 inch apart on lightly greased baking sheets. Bake 8-10 minutes or until edges are lightly browned. Allow to cool before storing in airtight container.

Makes about 3 dozen cookies.
