COCONUT OATMEAL REFRIGERATOR COOKIES | |
1 c. sugar 1 c. brown sugar 1 c. butter, butter or shortening 2 eggs 2 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 2 c. rolled oats 1 c. coconut 1/2 - 1 c. chopped nuts (opt.) Combine first 4 ingredients. (Spoon flour into measuring cup and level off) with fork stir flour, salt, soda and baking powder. Add to first mixture, mix well. Then add oats, coconut and nuts; mix well, then divide dough in half, form 2 rolls. Wrap dough rolls in wax paper or press dough into wax paper lined foil or wax paper boxes. Store in refrigerator or freeze. When ready to use, preheat oven to 375 degrees. Cut cookie dough into 1/4" slices, place 2" apart on ungreased cookie sheets and bake 10 to 12 minutes. |
