SPINACH/RICE CASSEROLE 
1 pkg. (10 oz.) frozen chopped spinach
3 eggs
1 can (13 oz.) evaporated milk
1 c. cooked rice
8 oz. shredded cheddar cheese
1/4 c. chopped onion
1/2 tsp. salt
1/2 tsp. pepper

Optional ingredients: sliced mushrooms, green pepper, water chestnuts. Microwave spinach in 1 quart casserole at high 8 to 9 minutes. Drain well and set aside. Mix eggs, milk, rice, cheese, salt, pepper in 2 quart casserole. Cover. Microwave at high 6 minutes, stirring after 2 minutes so cheese can melt.

Add onion, spinach and remaining ingredients into 8 inch square baking dish. Cover with waxed paper. Microwave at medium high 10 to 12 minutes until center is set. Makes 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
