SPINACH, RICE CASSEROLE 
1 pkg. (10 oz.) chopped spinach, frozen
3 eggs
1 (13 oz.) can evaporated milk
2/3 c. Minute Rice
8 oz. pasteurized cheese spread, cut into cubes
1/4 c. onion
1/2 tsp. salt
1/4 tsp. pepper

Microwave spinach in a 1 quart casserole dish at high 5 to 6 minutes.

Drain well and set aside. Mix eggs, milk, rice, cheese, salt and pepper in 2 quart bowl. Microwave high 5 to 6 minutes stirring after 2 minutes until cheese melts. Add onion and spinach to rice. Pour into 10 x 6 x 2 inch baking dish. Microwave high 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
