SPINACH AND RICE CASSEROLE 
1 (10 oz.) frozen chopped spinach, drained
3 c. cooked rice
2 c. cottage cheese
1 egg
1 tbsp. whole wheat flour
2 tbsp. Parmesan cheese
1 lg. onion, chopped
2 c. sliced mushrooms
1 clove garlic
1/2 tsp. thyme
Dash of pepper

Saute onion, mushrooms and garlic until tender. In large mixing bowl combine spinach, cottage cheese, flour and egg. Add sauteed vegetables and rice, Parmesan cheese, pepper and thyme. Turn mixture into a greased 2 quart casserole dish. Bake 30 minutes in 375 degree oven.
