CHICKEN CASSEROLE WITH
VEGETABLES (KIDS FAVORITE)
 
My son who's only a year old loves this recipe. I just need to use a food chopper to grind it down. He totally devours it in no time. This is a great way to get all vegetables and protein when they are fussy eaters!

1 box chicken stuffing (I use Stove Top)
1 (10 oz.) can cream of chicken soup
2/3 cup milk
1 (15 oz.) can jellied cranberry sauce (I like whole-berry Ocean Spray)
1 (1 lb.) bag frozen mixed vegetables
3 large chicken breasts (cut into 1-inch cubes or smaller; boiled until cooked - usually 20 to 25 minutes)

Preheat oven 350°F.

Make stuffing according to package directions, set aside. Mix cream of chicken soup, milk and cranberry sauce. Stir together until creamy. Stir in cooked chicken and top with stuffing mix.

Bake at 350°F for 40 to 45 minutes.
