SPINACH-RICE CASSEROLE 
1 pkg. frozen spinach, cook until tender, drain
2 eggs, beaten
1 c. milk
1 c. shredded cheese
1 c. cooked rice
1 tsp. minced onions
1 tbsp. salt

Preheat oven to 350 degrees. Add together 2 beaten eggs, milk, cheese, rice, onion and salt. Mix with spinach. Pour into shallow buttered baking dish (1 1/2 quart). Bake for 25 -30 minutes until set.
