SPINACH-RICE CASSEROLE | |
3 tbsp. butter 1/2 c. chopped onions 14 1/2 oz. can chicken broth 1/2 tsp. pepper 2 (10 oz.) pkgs. frozen spinach 1/2 c. chopped pimiento 2 c. cheddar cheese, shredded Sliced almonds Cook onion in butter. Add broth and pepper. Bring to a boil. Add rice and spinach. Simmer 15 minutes. Add remaining ingredients. Garnish top with almonds. Use 2 quart baking dish. Bake about 20 minutes at 325 degrees. 12 servings. |
