SPINACH CASSEROLE 
1 lb. hamburger
1 onion, chopped
1/2 pt. sour cream
1 can cream of mushroom soup
1 lb. Monterey Jack cheese, grated
2 pkgs. frozen, chopped spinach
3/4 c. uncooked rice

Cook rice and spinach according to package directions (water, salt, etc.). Brown hamburger and onion; drain. Combine all ingredients except cheese.

In large casserole put layer of mixture and layer of cheese (at least two layers) salt and pepper to taste.

Heat in oven at 350 degrees for 30 minutes.
