ITALIAN SPINACH CASSEROLE 
1 - 1 1/2 lbs. Italian mild sausage (take out of casing, cook & drain off fat)
9 eggs
2 lbs. Ricotta cheese
1/2 lb. Mozzarella cheese, grated
2 pkgs. chopped frozen spinach, cooked & drained well

Place cooked sausage in bottom of 9"x13" pan. Mix eggs with salt, pepper, Ricotta cheese, Mozzarella cheese and spinach. Pour over top of sausage and bake at 350 degrees for 45 minutes. Serves 10.
